Almost everyday I'm just a few feet from these wood-fired ovens, working on mixing, shaping, or baking some dough. Putting out around 450 loaves a dough isn't easy work, and the first couple of works my body was about as stiff as those pieces of wood, not to mention all the little things you have to think about when dealing with 12 bins of dough at the same time, but I can finally say things have clicked. My body's adjusting (getting some serious guns over here), and the smell of the burning wood, the wild yeasts, freshly milled grains, have already become comforting and familiar. With my little place, this sweet bakery, a couple of new friends, and biking to the ocean, I'm finally understanding why I felt I needed to come all the way over here.
